High Protein Breakfast Bagel Sandwich

40 ish grams of protein per serving

This protein-packed breakfast is one of our favorites! It starts with a homemade Greek yogurt bagel and is loaded with eggs, cottage cheese, bacon, and your favorite toppings. It's filling, delicious, and a great way to start the day.

Ingredients

For the Bagels 

(makes about 4 we love to double it for meal prep)

1½ cups all-purpose flour

1 cup plain Greek yogurt

1 teaspoon baking powder

1 egg, beaten (for egg wash)


For the Sandwich

Eggs, cooked however you like

Cottage cheese (we like to mix it into our eggs for extra protein)

Cooked bacon

Avocado

Sauerkraut

Sprouts

Salsa or ketchup


Instructions

Preheat your oven to 375°F (190°C).

In a large bowl, combine the flour, Greek yogurt, and baking powder. Mix until a dough forms, then knead until smooth.

Divide the dough into equal portions, roll each into a rope, and shape into bagels.

Shmear each bagel with the beaten egg.

Bake for 25 minutes or until the bagels are golden.

While the bagels are baking, cook your eggs however you like. We love mixing cottage cheese into the eggs for an extra protein and a creamy texture.

Cook the bacon until crispy.

Slice a bagel in half and layer with the eggs, bacon, avocado, sauerkraut, sprouts, and your favorite salsa or ketchup.
