Blissful Breaky Bowl

Delicious. Filling. Full of flavor and feel-good fuel.

What’s in it:

  • 5 scrambled eggs

  • 4 small potatoes (air-fried or stove in butter)

  • ¼ cup cottage cheese (I use Daisy brand it’s clean)

  • 2 tbsp sauerkraut

  • 1 tbsp pickled red onions (recipe below)

  • 2 tbsp salsa (recipe below or jarred)

  • Hot sauce (Yellowbird Serrano hot sauce don’t get the habanero unless you’d like a cleanse HAHA)

  • Salt + pepper to taste

  • Optional: ketchup if that’s your jam

About 27g protein plus probiotics, fiber, and healthy fats to keep you steady + full.


QUICK PICKLED ONIONS

These make everything better.

Ingredients:

  • 1 red onion (thinly sliced)

  • 1 cup hot water

  • ½ cup white vinegar

  • 1 tbsp coconut sugar

  • 1½ tsp salt

Instructions:
Mix everything until dissolved. Add onions. Let sit on counter for 1 hour. Then keep in the fridge up to 3 weeks.


EASY HEAVENLY HOMEMADE SALSA

Makes a batch that lasts all week.

Ingredients:

  • 8–10 red tomatoes

  • 1 onion

  • 1 Anaheim pepper

  • 1 jalapeño

  • 3 garlic cloves

  • 1 bunch cilantro

  • Juice of 1–2 limes

  • Salt to taste

Instructions:
Optional: Roast the veggies for more flavor. Blend until smooth or chunky. Store in fridge.
